Now, I've always been an oatmeal fan, but beautiful oatmeal? Seriously? Yes--when it's mixed up with  fruit and nuts and baked to perfection. This is my new favorite thing, and the kicker? It's healthy!/divdiv class="separator" style="clear: both; text-align: left;"br //divdiv class="separator" style="clear: both; text-align: center;"a href="http://2.bp.blogspot.com/-kUuTVSezgIk/ULhpM17BlkI/AAAAAAAAo6I/cBkreIdE79I/s1600/IMG3396.JPG" style="margin-left: 1em; margin-right: 1em;"img border="0" height="400" src="http://2.bp.blogspot.com/-kUuTVSezgIk/ULhpM17BlkI/AAAAAAAAo6I/cBkreIdE79I/s400/IMG3396.JPG" width="317" //a/divdiv class="separator" style="clear: both; text-align: left;"br //divdiv class="separator" style="clear: both; text-align: center;"iToasted walnuts give this dish great flavor and texture./i/divdiv class="separator" style="clear: both; text-align: left;"br //divBefore I get to the recipe that I eventually used, let's give a little shout out to the blog that started this new obsession of mine. Thanks go to ia href="http://www.sohowsittaste.com/2012/06/blueberry-raspberry-baked-oatmeal.html" target="blank"So, How's It Taste?/a /ifor the gorgeous picture that turned me on to this idea that apparently started with the Amish (they know how to cook!). I looked around, of course, and found similar baked oatmeal recipes all over the blog-o-sphere, some healthy and some bordering on dessert. I actually tried different versions and found that all of them turned out to be tasty...this is definitely something that can be adapted to your own taste. In the end, I chose the healthier route, in part because a recent visit to my doctor revealed some icky cholesterol levels, but mainly because the taste is in no way compromised by using a healthier version.br /div style="text-align: center;"ibr //i/divdiv style="text-align: left;"bBerry Baked Oatmeal/b/divdiv style="text-align: left;"a href="http://www.bakespace.com/recipes/print/Berry-Baked-Oatmeal/53415/" rel="nofollow" target="blank"Printable Recipe/a/divdiv style="text-align: left;"br //divdiv style="text-align: left;"2 cups rolled oats/divdiv style="text-align: left;"1/2 cup chopped walnuts, toasted/divdiv style="text-align: left;"1/3 cup brown sugar/divdiv style="text-align: left;"1 teaspoon baking powder/divdiv style="text-align: left;"1 teaspoon cinnamon/divdiv style="text-align: left;"a pinch of salt/divdiv style="text-align: left;"2 cups skim milk/divdiv style="text-align: left;"1 large egg, slightly beaten/divdiv style="text-align: left;"1 tablespoon coconut oil/divdiv style="text-align: left;"2 teaspoons vanilla extract/divdiv style="text-align: left;"2 ripe bananas, sliced/divdiv style="text-align: left;"1 1/2 cups raspberries or blueberries/divdiv style="text-align: left;"br //divdiv style="text-align: left;"Preheat oven to 375 degrees F.; spray a 1 1/2 quart casserole dish with cooking spray./divdiv style="text-align: left;"br //divdiv class="separator" style="clear: both; text-align: center;"a href="http://1.bp.blogspot.com/-WR7VZs56kI/ULh6GDozR-I/AAAAAAAAo7o/Friw4ts8jg/s1600/IMG3457.JPG" style="margin-left: 1em; margin-right: 1em;"img border="0" height="400" src="http://1.bp.blogspot.com/-WR7VZs56kI/ULh6GDozR-I/AAAAAAAAo7o/Friw4ts8jg/s400/IMG3457.JPG" width="400" //a/divdiv style="text-align: left;"br //divdiv style="text-align: left;"In a large bowl, combine the oats, 1/4 cup of the walnuts, brown sugar, baking powder, cinnamon, and salt./divdiv style="text-align: left;"In another bowl, or in a large measuring cup, mix together the milk, egg, coconut oil, and vanilla./divdiv style="text-align: left;"br //divdiv class="separator" style="clear: both; text-align: center;"a href="http://4.bp.blogspot.com/-TakU0e11P8Q/ULhvBMqSTLI/AAAAAAAAo64/M4Ec7gLZ5nQ/s1600/IMG3417.JPG" style="margin-left: 1em; margin-right: 1em;"img border="0" height="400" src="http://4.bp.blogspot.com/-TakU0e11P8Q/ULhvBMqSTLI/AAAAAAAAo64/M4Ec7gLZ5nQ/s400/IMG3417.JPG" width="400" //a/divdiv class="separator" style="clear: both; text-align: center;"br //divdiv class="separator" style="clear: both; text-align: left;"Distribute the sliced bananas evenly on the bottom of the casserole dish./divdiv class="separator" style="clear: both; text-align: left;"br //divdiv class="separator" style="clear: both; text-align: center;"a href="http://4.bp.blogspot.com/-MH78duLy4lc/ULh8M3Rb59I/AAAAAAAAo7w/UqLEP6Wp7pU/s1600/IMG3415.JPG" style="margin-left: 1em; margin-right: 1em;"img border="0" height="400" src="http://4.bp.blogspot.com/-MH78duLy4lc/ULh8M3Rb59I/AAAAAAAAo7w/UqLEP6Wp7pU/s400/IMG3415.JPG" width="400" //a/divdiv class="separator" style="clear: both; text-align: left;"br //divdiv style="text-align: left;"Sprinkle two-thirds of the berries over the top of the bananas. If you want to cut out the sugar, but like the sweetness, simply substitute 1/3 cup sugar-free maple syrup for the brown sugar (add it to the liquid mixture instead of to the oats). I've also subbed steel cut oats for the rolled oats--it was fine, but the texture was definitely more chewy. Don't have coconut oil? Use butter or just cut it out completely. I've done both and it's all good./divdiv class="separator" style="clear: both; text-align: left;"br //divdiv class="separator" style="clear: both; text-align: center;"a href="http://3.bp.blogspot.com/--YPst4COG8/ULiBaigyN-I/AAAAAAAAo8I/u0nes9EGhk/s1600/IMG3413.JPG" style="margin-left: 1em; margin-right: 1em;"img border="0" height="400" src="http://3.bp.blogspot.com/--YPst4COG8/ULiBaigyN-I/AAAAAAAAo8I/u0nes9EGhk/s400/IMG3413.JPG" width="400" //a/divdiv class="separator" style="clear: both; text-align: left;"br //divdiv style="text-align: left;"So, there you have it....baked oatmeal. Fancy enough to serve to your guests, but easy and versatile enough to bake ahead and portion out for your own breakfast during the week. I highly recommend it./divdiv style="text-align: left;"br //divbr /
