Did you know you can buy a spiralizer for less than $10? It's totally worth it too because zoodles, or zucchini noodles, are so much healthier than pasta and really just as delicious! This recipe calls for homemade crockpot turkey meatballs in a marinara sauce over zoodles! This is perfect in the summertime because zucchini is fresh and in season, but it also has the comfort feeling of a fall dish. Somehow it's both light and fresh, and warm and satisfying. If it's your first time experimenting with zoodles, a good rule of thumb is one zucchini per person. Zoodles are so versatile because you can serve them under spaghetti or alfredo sauce, in a lasagna boat, in soups, stir-fries... anything! The family won't even miss the pasta noodles!
- 12 leftover crock pot turkey meatballs and sauce (1/2 batch)
- 1 tablespoons extra virgin olive oil
- 1/4 cup red onion, diced
- 3 cloves garlic, minced
- 3 (8 oz each) zucchinis, cut into long julienne strips (with a mandolin or spiralizer)
- salt and fresh cracked pepper, to taste
