CHEDDAR & SRIRACHA CORNMEAL PANCAKES

Brinner: it is breakfast for dinner. Some people are fanatics for it; I am not that into it. Having a stack of white, carb-y pancakes for dinner with no protein makes me feel too full and yet not full enough all at the same horrible time.

No, I am not a fan of brinner. I am told that when there are more mouths to feed, it becomes a beloved trick for the wallet. Point taken. We will see.

And so this happened. I set out for a brinner that I would love. This with a side of breakfast sausage is what I am all about, even at 5:00pm.

Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 2 teaspoons baking soda
  • 1 teaspoon paprika
  • ½ teaspoon baking powder
  • ½ teaspoon chili powder
  • 2 cups milk
  • 2 tablespoons olive oil
  • ¼ cup maple syrup
  • 2 teaspoon Sriracha
  • 4 fried eggs
  • Cheddar, shredded
  • Green onions, sliced
