Healthy, light, vegan and gluten-free, this salad from Two Raspberries is lunchtime bliss. The veggie burger is paired with a chili pineapple mango salsa that won’t leave you wanting for flavor or color. If you have the time, whip up your own sweet potato veggie burgers with the included recipe.
Veggie burger cabbage cups
All you really need for this crisp, flavorful recipe are cabbage, chopped onions and veggie burgers. Hungry Healthy Girl suggests using a chile relleno-flavored patty, but you could just as easily mix it up with some Asian inspiration as well. If you go that route, pair with soy sauce for dipping.
