Biscoot Al Rahash

Rahash is the Gulf’s version of Al Halawah tahini, made from sesame seed paste, sugar and flavoring. Kuwait is very famous for its version, which is sweetened with debs (date syrup). The dough is a bit crumbly, so you want to make sure to pack it together and then shape or cut the cookies. You can bake them as is, add sesame seeds before before baking or stick two together for a sandwich cookie with debs or jam. These little cookies remind me of a mix between Scottish shortbread and American peanut butter cookies, they’re really good.

Ingredients

  • 1 cup tahini
  • 1/2 cup sugar
  • 1 egg
  • 1/2 teaspoon salt
  • 1-1/4 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon ground cardamom
