Date Scones

Whenever my Mum is staying with us we make a batch of these every third day or so. Mum loves them, and she takes her scones very seriously. To be honest I would perhaps like to tweak the recipe a little but I make them for Mum and she wants them left exactly as they are! They are also great in lunchboxes if you are wanting a break from sandwiches. I hope you enjoy them.

Ingredients

  • Date Scones
  • 10 medjool dates, seeds removed
  • 1 cup brown rice flour
  • 1 cup oat flour
  • 1 tablespoon psylium husks (optional)
  • 2 eggs
  • 1/2 cup coconut milk
  • 2 teaspoon baking powder
  • pinch of salt
