  • 1 cup buttermilk, warmed to 110F
  • 1/4 cup coconut sugar
  • 1/3 cup vegetable oil
  • 3 large eggs, lightly beaten
  • 1/2 teaspoon salt
  • 3 to 3-1/2 cups white whole wheat flour
  • 1 tablespoon poppyseeds
  • ICING:
  • 1/2 cup powdered xylitol (or powdered sugar)
  • 1-2 tablespoons lemon juice
