“I know, National pie day was on Wednesday, but I didn’t get around to making pie until yesterday..The results were amazing with this awesome blueberry pie!” ~Sarah

Ingredients:

Crust:

• 3 cups crushed sugar-free graham crackers

• 1 cup butter, melted

• 1/3 cup cold water

Filling:

• 8 cups fresh *or * frozen blueberries, thawed

• 1/2 cup cornstarch

• 2 tablespoons lemon juice

• 1/2 cup honey

Topping:

• 1 cup whole-wheat flour

• 1/2 cup butter, softened

• 2 tablespoons maple syrup
