Being that it's Cinco de Mayo, what better salad to have today than a taco salad? I really enjoy salads that have a combination of fruits, nuts and cheese... the only exception is when it comes to taco salad. Instead, I like taco salads chock full of all my fave ingredients I'd put into a burrito. This specific taco salad has another fun component - Dorito chips! Yep, that's right... and this Dorito Taco Salad has more surprises in store...

Taco salad usually conjures up a vision of lettuce, tomato, cheese, olives, black beans, sweet corn and maybe some seasoned beef, chorizo sausage, chicken or pork. It's then topped with a dollop of sour cream and/or even guacamole with a nice dose of salsa to pull it all together. But this is not that kind of taco salad.

Ingredients

  • 1 lb ground beef
  • 1 link soft Mexican chorizo
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • salt & pepper to taste
  • 2 cups chopped lettuce (more or less to your liking)
  • 1 cup chopped tomato (more or less to your liking)
  • 1 cup canned black beans, rinsed and drained
  • 1 cup canned sweet corn, drained
  • 1 cup shredded taco blend cheese (more or less to your liking)
  • 1 (16 ounce) bottle French or Catalina salad dressing
  • 1 (12 1/2 ounce) bag Nacho Cheese Doritos chips or nacho flavored tortilla chips, crushed
