Baja Fish Taco Salads

Spring is just around a not so distant corner. Although in perpetually sunny southern CA, springtime never feels too far away. While my aversion to the season has been made clear here in the form of long dreamy posts professing my affinity for fall and winter—I actually do love all the fresh foods that spring brings. In honor of the impending change of seasons I made something fresh and vibrant and tasty; Baja fish taco salads using one of Earthbound Farm’s  new Organic Chopped Salad Kits!

I partnered with The Feed Feed and Earthbound Farm to whip up a delicious meal using their Southwest Salad Kit. I’ve said countless times how I love an interesting salad—leaves and dressing won’t suffice. And you know I despise uneventful healthy foods. This kit comes with everything you need for a healthy and delicious salad including crisp veggies, a zesty tomatillo dressing, sunflower seeds, and tortilla strips. Then I introduced some taco-inspired elements like homemade pico de gallo, a tart lemon-turmeric sour cream, and crisp beer-batter fish to complement the flavors in this tasty kit!

After crawling out of my winter hibernation-holiday food coma I find myself craving healthier eats. I like to take my favorite dishes and lighten them up a bit! I adore fish tacos and this is a great alternative way to enjoy them! If you want to stay on the healthier side, simply grill your fish and ditch the beer and batter. I’m a sucker for fried fish however and I couldn’t resist. Plus, for some reason, fish tacos in salad form sounds infinitely healthier? Right? Right.

Simon and I have been eating more salads in general and we are always looking for creative ways to keep them interesting.  And no, not by topping them with slices of pizza…although…

I want—no need a lot going on in my salad, or like a petulant child I will simply look the other way. I like salads that incorporate protein, lots of fresh veggies, and a bit of crunch for texture. This Southwest Salad Kit has all of that! I even added a bit of queso fresco to keep in with the taco theme. If I can’t celebrate the coming spring with a good attitude, at least I’ll have good food.

Baja Fish Taco Salads


  • 1 Earthbound Farm Organic Southwest Chopped Salad Kit
  • 1 lb. fish (like tilapia or cod)
  • ¾ cup flour
  • 1 ½ Tbsp. cornstarch
  • ¾ tsp. salt
  • 1 tsp. Garlic powder
  • 1 tsp. Smoked paprika
  • ¾ cup beer (preferably an IPA)
  • 10.5 oz. cherry tomatoes, halved
  • ½ cup diced red onion
  • 2 Tbsp. minced cilantro
  • 8 oz. sour cream
  • ¼ cup lemon juice
  • 1 tsp. ground turmeric
  • ½ tsp. salt
  • ¼ tsp. garlic powder
