Vegan Mapo Tofu

Vegan Mapo Tofu

No meat in this hot-savory vegan version of Mapo Tofu.

Ingredients

  • 1 tablespoon of canola oil
  • 1 head of cauliflower – finely chopped
  • 1 purple bell pepper – seeded and finely diced
  • 1 Anaheim pepper – seeded and finely diced
  • 2 cloves of garlic – minced
  • Kosher salt
  • 2 tablespoons of soy sauce
  • 2 tablespoons of chili-garlic sauce
  • 1 tablespoon of agave nectar
  • 1 14 ounce package of firm tofu – drained and finely chopped
  • 3 scallions – finely chopped
  • 1 cup of unsalted peanuts
  • ½ cup of water + 1 and ½ teaspoons of corn starch – whisked together well
