Loaded Holiday Panini

This delectable panini embraces simplified holiday dishes and puts them between two pieces of garlic herb brushed bread.

Ingredients

  • 12 ounces sweet potatoes, sliced into ½" thick rounds
  • Cooking oil spray (I used propellant-free organic canola or coconut oil)
  • ⅛ teaspoon white pepper
  • ⅛ teaspoon salt
  • 1 tablespoon coconut oil
  • 1½ cups thinly sliced brussels sprouts
  • 1 cup slivered white onion
  • ¼ cup coconut bacon (I love Phoney Baloney's but you can find recipes online)
  • Salt and pepper to taste
  • 1½ cups cranberries (fresh or frozen and thawed)
  • ½ cup orange juice
  • 1 tablespoon sugar
  • 3 tablespoons vegan butter, melted
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon dried thyme
  • ⅛ teaspoon dried sage
  • ⅛ teaspoon dried parsley
  • Pinch of salt
  • 8 thick slices of crusty bread (sourdough or wheat work well)
  • 2 packets gardein gravy (comes with cutlets)
  • 2 cups loosely packed baby arugula
