Curried Chickpea and Carrot Salad + Choosing Raw Giveaway!

A healthy spin on curried chicken salad without the meat and with lots of flavor! Recipe reprinted with the permission of Gena Hamshaw and Da Capo Publishing.

Ingredients

  • 3 Cups Cooked Chickpeas
  • 1 1/2 Cups Grated Carrots
  • 1/2 Cup Currants or Raisins
  • 3 Tbsp. Tahini
  • 1 Tbsp. Freshly Squeezed Lemon Juice
  • 1 Tbsp. Apple Cider Vinegar
  • 2 Tbsp. Water
  • 1 Tbsp. Tamari , Nama Shoyu , Bragg’s Liquid Aminos , or Coconut Aminos
  • 2 tsp. Pure Maple Syrup
  • 1 tsp. Curry Powder
