Ingredients

  • 1 medium eggplant/aubergine/bhartha baingan/brinjal
  • 1 tsp chopped fresh basil or ½ tsp dried basil
  • ½ tsp dry oregano
  • 1 small to medium onion, finely chopped
  • 2 large tomatoes, finely chopped - about 2 cups of finely chopped tomatoes
  • 2-3 garlic cloves/lahsun, finely chopped
  • 4 tbsp vegetable oil for frying the eggplants
  • 1 tbsp olive oil for the sauce
  • 1 tsp white or red wine (optional)
  • 40-50 gms cheese, mozarella or cheddar
  • salt and black pepper as required
