We're just wet here - soaked to the bone and chilly. To confuse things even more, just a few days ago it is near 60 degrees, super foggy, and felt like a different season. I made this Greek Yogurt Ice Cream, we walked the foggy beach and visited a sad whale that was the victim of the North East storm series hitting us these past few months. It's a little spooky to think this is January in Massachusetts...br /br /a href="http://1.bp.blogspot.com/-O657EHY6Qac/UPbrxnjXTWI/AAAAAAAAEZk/l0YF1luFQAY/s1600/DSC0148.JPG" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"img border="0" height="424" src="http://1.bp.blogspot.com/-O657EHY6Qac/UPbrxnjXTWI/AAAAAAAAEZk/l0YF1luFQAY/s640/DSC0148.JPG" width="640" //a br /div class="separator" style="clear: both; text-align: center;"a href="http://3.bp.blogspot.com/-iUROIXfkhlw/UPbrxz-YblI/AAAAAAAAEZo/x4jpgXZ7nMA/s1600/DSC0152.JPG" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"img border="0" height="424" src="http://3.bp.blogspot.com/-iUROIXfkhlw/UPbrxz-YblI/AAAAAAAAEZo/x4jpgXZ7nMA/s640/DSC0152.JPG" width="640" //a/divI understand ice cream is an odd choice for winter but I couldn't help myself. The idea of Greek Yogurt Ice Cream just sounded too delicious and this smart recipe doesn't require an ice cream maker or any equipment other than a metal bowl and electric beater. Similar to the a href="http://www.twobluelemons.com/2012/12/chamomile-yogurt-panna-cotta.html"Chamomile-Yogurt Panna Cotta /ait has the distinctive yogurt zing which I like and a strong honey sweetness.br /br /div class="separator" style="clear: both; text-align: center;"a href="http://3.bp.blogspot.com/-MocEsHlz5yo/UPbschBs3FI/AAAAAAAAEa4/idekSrUeR-M/s1600/DSC0126.JPG" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"img border="0" height="424" src="http://3.bp.blogspot.com/-MocEsHlz5yo/UPbschBs3FI/AAAAAAAAEa4/idekSrUeR-M/s640/DSC0126.JPG" width="640" //a/divbr /div class="separator" style="clear: both; text-align: center;"a href="http://1.bp.blogspot.com/-2Toa91FiedU/UPbsdGVdmLI/AAAAAAAAEbA/5drhpMzuNMs/s1600/DSC0140.JPG" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"img border="0" height="424" src="http://1.bp.blogspot.com/-2Toa91FiedU/UPbsdGVdmLI/AAAAAAAAEbA/5drhpMzuNMs/s640/DSC0140.JPG" width="640" //a/divbGreek Yogurt Ice Cream /bbr /adapted from a href="http://www.amazon.com/gp/product/1580083544/ref=asliqfspasintl?ie=UTF8&tag=twoblulem-20&linkCode=as2&camp=1789&creative=9325&creativeASIN=1580083544"Ancient Grains for Modern Meals/a  bbr //bbr /br /2 cups plain whole-milk Greek yogurtbr /1 1/2 cups heavy whipping creambr /1/2 cup honeybr /1 tablespoon freshly squeezed lemon juicebr /1 teaspoon pure vanilla extractbr /1 teaspoon ground cinnamonbr /box of a href="http://www.annasthins.ca/us/annas-cookies/chocolate-mint-thins/"Anna's chocolate mint cookies/a br /br /1. Place all the ingredients in a large stainless steel bowl. Whisk until they are well blended and the honey is incorporated.br /br /2. Cover with a led or with plastic wrap and refrigerate the mixture for 2 hours. Freeze in an ice cream maker according to the manufacturer's instructions. If you don't have an ice cream maker - transfer the bowl with the ice cream to the freezer. After 1 hour, beat the mixture using a handheld mixer until smooth while scraping down the sides of the bowl with a spatula. This prevents formation of ice crystals. Return to the freezer and repeat a few more times until frozen. This will take at least 5 hours, depending on your freezer.br /br /div class="separator" style="clear: both; text-align: center;"a href="http://3.bp.blogspot.com/-lfy9b-Iw3Rg/UPbtm9ifT0I/AAAAAAAAEbM/Ybh5XnXw7PY/s1600/DSC0143.JPG" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"img border="0" height="424" src="http://3.bp.blogspot.com/-lfy9b-Iw3Rg/UPbtm9ifT0I/AAAAAAAAEbM/Ybh5XnXw7PY/s640/DSC0143.JPG" width="640" //a/divbr /div class="separator" style="clear: both; text-align: center;"a href="http://2.bp.blogspot.com/-K98JjDoZQk0/UPbtnbRAwDI/AAAAAAAAEbQ/k0cppeMokoI/s1600/DSC0150.JPG" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"img border="0" height="424" src="http://2.bp.blogspot.com/-K98JjDoZQk0/UPbtnbRAwDI/AAAAAAAAEbQ/k0cppeMokoI/s640/DSC_0150.JPG" width="640" //a/div3. Remove from freezer at least 15 minutes before serving. After the ice cream was in our freezer for a few days it got very hard. I had to let it rest out for 30-40 minutes but once soft still tasted delicious. Scoop into a bowl and top with your favorite crisp cookie or sandwich between two of Anna's chocolate and mint thins.
