Pumpkin Pasta Alfredo

I’ve posted all the sweet things, so it was time to throw in a savory. I wasn’t 100% sure how I’d like a savory pasta. So I gave it a whirl, and loved it! It was super simple to throw together and I had all of the ingredients on hand – which always makes it nice when you don’t have to make a special trip to the store for fancy ingredients you normally don’t have. The heavy cream has been a staple in the fridge due to all the fresh whipped cream I’ve been making for my No Bake Pumpkin Cheesecake Icebox Cake, No Bake Pumpkin Cheesecake Parfait, and my Pumpkin Cheesecake with Pecan-Gingersnap Crust!

Ingredients

  • 2 c. uncooked penne noodles
  • 1 c. pumpkin puree
  • 1 c. heavy cream
  • 1 tbsp. butter
  • 2 garlic cloves
  • 2 tbsp. fresh grated parmesan
  • Salt & pepper to taste
