Spinach and Ricotta Egg Bake

I don’t usually post breakfast recipes on Mondays, but since it is christmas week, I thought that you would love to make this egg dish for Christmas morning.  It is easy and yummy and the best part is is that you can make it ahead of time. Just prep everything the night before, pour into a baking dish, cover and refrigerate overnight.  In the morning, simply pop the casserole into a warm oven while your busy opening presents, and voila, a lovely Christmas breakfast is ready to be served.  And, even though your house is probably covered with wrapping paper and toys, you can take rest that at least your kitchen is spotless! Make sure to buy the following at the market early in the week to avoid the Christmas rush: eggs, onion, baby spinach, ricotta or feta, Parmesan, bacon and milk.

Ingredients

  • 2 Tablespoons butter or oil
  • 1 small onion, minced (about ½ cup)
  • 8 eggs
  • 1 cup ricotta or feta
  • 5 slices cooked bacon, crumbled (optional)
  • 1 teaspoon salt
  • fresh ground pepper
