ROSEMARY ROASTED MUSHROOMS WITH SPINACH

Ingredients

  • 1 pound white mushrooms
  • 8 ounces shitake mushrooms
  • 2 Tablespoons olive oil
  • 1 tablespoons fresh rosemary crushed with a mortar and pestle
  • 8 ounces fresh spinach
  • ¼ cup sliced almonds
  • ⅛ teaspoon sea salt
  • pepper to taste
  • 1½ tablespoon balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • ½ tsp Dijon mustard
  • 1 tsp maple syrup
  • 2 teaspoons fresh rosemary, crushed with mortar and pestle
  • Pinch of salt and pepper
