This is an outtake from a new project I am working on. Don't worry: the recipe IS delicious, but it's not gonna vibe with the *thing* I am putting together. If I sound mysterious, it's cuz I am being mysterious. But I promise I will share more info on this project soon-ish... *cute evil smile*.
Since getting back from my big ole trip, I have renewed energy and motivation to do stuff I was too lazy for before. One of these activities is making my own nut milks way more often. I still use store-bought stuff about half the time (CONVENIENCE THO) but I have a lovely routine of regularly making my own batches of plant-based milks in the morning, every week or other week, and then using the leftover nut pulp in some energy bites right after. The texture of nut pulp (and the unsexiness of the name) may be a turn-off for some, but I have gotten used to it and the fact that it's good for me and isn't going towards food waste makes me happy. When you combine the pulp with whole nuts, oats and/or coconut and add delicious flavourings, the texture is really no big deal. Here I have added a bunch of shit that is awesome for you: maca can help balance hormones (I can attest to this, during my period it's a lifesaver), camu camu has ALL the vitamin C, almonds contain vitamin E which is great for your brain and skin, and flax seeds are an excellent source of fiber (we all poop). ALMOND BITES with MACA, VANILLA + FLAX
[ makes around 20 small bites ]
- 1 cup almond pulp
- 1 cup walnuts
- ½ teaspoon vanilla powder
- 2 tablespoons maca powder
- 1 tablespoon ground flax seed
- 1 tablespoon camu camu powder
- ¼ cup maple syrup
- 3 tablespoons melted coconut oil
