May is around the corner and the market is full of fresh vegetables straight up from the farm onto your table. Spring onions, radishes, tomatoes, zucchini and many others, oozing with deliciousness, piled up on the stands, just waiting to be picked up and taken home. I went to my market yesterday and spotted my favorite vendor, Margaret, with a batch of fresh zucchini, beautiful in both color and shape. Immediately, I felt an urge for a zucchini flavored dish. I bought a good 3 pounds, just in case, and headed home in a hurry to see what to prepare tonight.
