pI was inspired the other day to make a Turkey Bolognese with pasta but decided to use Spaghetti Squash instead.   • olive oil
  • 2 small Spaghetti Squash
  • 1 medium onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 4 garlic cloves, minced
  • ½ pound ground turkey
  • ½ pound turkey sausage, casings removed
  • 1 15oz. can chopped San Marzano tomatoes
  • ½ cup white wine
  • 8 Basil leaves, rolled & julienned
  • ¼ Italian parsley leaves, chopped
  • salt & pepper to taste
  • Shaved Pecorino/ Romano
