Grilled Pork Tenderloin with Roasted Cherry Salsa
- 1 cup couscous, cooked according to package directions
- 1 t olive oil
- 3 cups whole fresh cherries
- 1/8 of a medium-sized red onion, coarsely chopped
- 1 clove garlic, peeled and left whole
- 1/4 cup cilantro
- 2 t chipotle pepper, chopped fine
- 1/2 t salt, or to taste
