I’ve seen the whole Bacon Wrapped Tater Tots thing before. They always sounded pretty good to me so I filed them away in the “one of these days” section in the back of my mind. Then, a few days ago, I was wandering around the grocery store searching for recipe inspiration (a regular occurrence for me) when I spotted the tater tots. Which made me think of Bacon Wrapped Tater Tots, which made me think of my favorite way to cook bacon – with a coating of smoky chipotle adobo sauce and brown sugar – which made me think of all of that bacon and tater tot deliciousness going into my belly, which made me put the tater tots in my cart, run to the bacon aisle and home for a major bacon tater tot binge. But I did share, so I’m not completely mortified to confess my utter lack of self-control.
- 40 frozen tater tots, thawed (about 1/2 package)
- 10 slices bacon (preferably not thick-cut)
- 1 cup brown sugar
- 1/4 cup adobo sauce (from a can of chipotles in adobo sauce)
