  • 1/2 cup + 2 tablespoons canola oil (or any other neutral oil)
  • 2 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 large egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1 1/2 cups milk, room temperature
  • 1 cup strong-brewed coffee, hot
  • 2 cups unsalted butter, room temperature
  • 1/4 cup loose Earl Grey tea
  • 1/2 cup + 2 tablespoons egg white, room temperature
  • 1 1/4 cups granulated sugar
  • 1 1/2 teaspoons vanilla bean paste
