Mango Coconut Banana Bread Granola Bars

I think I live at the grocery store.  Between Walmart and Dillons, I’m there almost every other day during the week and I seriously couldn’t be happier.  I love grocery shopping … call me crazy.  It wouldn’t be the first time.

After practice and before babysitting, I was killing my customary time at Dillons and in the fresh produce section, there was this darling chalkboard with a recipe for mango salsa, along with baskets of avocados, mangos, tomatoes, and cilantro.  GUYS.  I couldn’t say no.  Thankfully my one hand was already taken by the biggest bunch of bananas I could find (which made it into these granola bars, though that wasn’t planned) so I grabbed three mangos.  I’m pretty sure I prayed on the way to the checkout, specifically that I would.not.drop.the.mangos.

Ingredients

  • 2 medium ripe bananas
  • 1 Tablespoon coconut oil, melted
  • 3 Tablespoons pure maple syrup
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • ¼ teaspoon cloves
  • 1-1/2 cups old fashioned oats
  • ½ cup oat flour
  • ½ cup unsweetened coconut shreds
  • ½ cup chopped hazelnuts
  • ½ mango, peeled and chopped
