Grilled Watermelon Pizza with Blueberries, Parmesan and Arugula

Grilled Watermelon Pizza with Blueberries, Parmesan and Arugula

Refreshing and sweet, Grilled Watermelon Pizza with Blueberries, Parmesan and Arugula is a fun twist on the traditional pizza pie. Simple to make, this is a summertime must have for every party this season.

I always wanted to build a vegetable garden…..for like a billion years. When we bought our house four summers ago, I was itching to dig up the yard and start a mini farm. Really. I had visions of rows of sweet pea vines, corn stalks and perfectly perky tomato plants thriving in the summer sun just bursting with fresh vegetables.  I imagined a pretty willow fence with a path of crushed pebbles where I’d carry a straw basket out to the garden to gather the goods. Can you tell I spent quite a bit of time pinning vegetable garden on Pinterest? Well, I finally got my vegetable garden this summer and let me tell you…..it’s not quite the stunner I had hoped it would be. And I’ve already had a few casualties like our broccoli got all weird, then turned yellow with some black spots so they had to go. And the cauliflower was sadly following in it’s footsteps so out they came. A bunny keeps eating the carrot leaves and kale. But I do have a few tomato plants that seem to be doing well and we’re already knee deep in cucumbers. And we have some baby watermelon which is really all we wanted anyway. Sooooo……there’s that.
