Ingredients

  • This recipe is for a 6½-inch cast iron or pie pan.
  • 1 teaspoon white vinegar
  • ¼ cup milk
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • 2 tablespoons shortening
  • 2 tablespoons unsalted butter, softened
  • 2 ounces oyster mushrooms
  • 4 ounces beech mushrooms
  • 1 garlic clove, minced or pressed
  • a little bit of olive oil
  • 1 egg (and 1 additional egg if you want to put an egg wash on the pie crust rim, it's optional)
  • ¼ cup heavy cream
  • ¼ cup grated gruyere
  • 1 teaspoon finely chopped marjoram
  • chopped parsley
