Ingredients

  • 1 tablespoon unsalted butter
  • 1 shallot, minced
  • 1 celery stalk, minced
  • 1 teaspoon tomato paste
  • 1 cup chicken broth (I like it better than vegetable broth or store-bought fish stock in this recipe)
  • ½ cup dry white wine
  • 6 ounces crab meat
  • 2 tablespoons heavy cream
  • 1-2 teaspoons sherry
  • pinch of nutmeg
  • a few sprigs of thyme
