Happy Cinco de Mayo! Boy, do I have a treat for you today! This has seriously become one of my new favorite recipes. I can’t get enough!! I’ve made it multiple times over the past couple of weeks, and I’ve enjoyed every last bit of left-overs in between. It’s not fancy, but it’s easy, fast, and absolutely incredible!
- 4 eggs
- 6 egg whites
- 1 ½ cups low-fat milk
- 1 pound extra-lean ground beef, cooked and drained
- 1 packet taco seasoning
- 1 red bell pepper, diced
- ¾ cup sliced green onions
- 1 ½ cups reduced-fat Mexican blend shredded cheese, divided
- 9 corn tortillas
