Ingredients

  • 9 cups chicken broth
  • 8 oz of Udon or Rice noodles PER BOWL
  • 2 cups bean sprouts
  • 2 cup diced carrot
  • 2 cups cooked diced chicken
  • 2 cups pea pods cleaned
  • 1-2 oz dried Shitake mushrooms (I found them at Krogers)
  • 2 tbs grated fresh ginger
  • 2 tbs low sodium soy sauce
  • 1 tbs sesame oil
  • 3 small green onions (white and green parts sliced)
  • 1 tbs Miso paste dissolved in 1 cup warm water (Can substitute juice of a lemon to taste)
  • fresh mint, basil or cilantro leaves for garnish
