Ingredients

  • Kosher salt
  • 2 pounda russet potatoes
  • 3 to 4 large egg yolks
  • 1 cup freshly grated Parmesan
  • 1/4 teaspoon freshly grated nutmeg
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup all-purpose flour, plus more for dusting board and dough

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cup milk
  • 1/2 cup half and half
  • 1 cup grated truffle cheese
  • Salt and Pepper to taste
