Ham and Potato Breakfast Casserole

Our plan for Easter weekend this year is to visit our friends in South Dakota. We will spend our time visiting, going to church and, of course, eating lots of great food! It has become a tradition that when we go to their house, the guys cook everyone made-to-order omelets for breakfast one of the mornings. Since Easter morning will be busy, we will probably have omelets on Satuday morning and breakfast casserole on Sunday. Today I’m sharing an easy Ham and Potato Breakfast Casserole recipe that would be perfect for Easter brunch!

Ingredients

  • 3 cups milk
  • ¼ cup butter
  • 1 pkg julienne cheesy potatoes
  • ¼ tsp freshly ground pepper
  • 3 cups ham, cooked and diced
  • ¼ cup green onions, sliced
  • 1 cup Roma tomatoes, diced
  • 1 cup Original Bisquick Mix
  • 4 eggs, slightly beaten
  • 2 cups shredded cheddar cheese, divided
  • Optional: sliced green onions and black pepper for garnish
