My number one trick for eating more greens? Keeping homemade dressing on hand. I’ve said it before and I’ll say it again, I hate spending money on the store-bought varieties because they’re never as good and they’re overpriced. So I make my own and I’ve got the process down to a super easy science.

I love using fruit in salad dressings for a couple of reasons. The most obvious being that it’s a really healthy option. Aside from that, it also means I can squeeze in an extra serving of fruit while getting my greens in. And most importantly, it makes the flavor combination possibilities ENDLESS.

So now you get to try my new favorite! This strawberry balsamic dressing is best over fresh, crunchy mixed greens with juicy cherry tomatoes, red onion, chopped almonds, and a few crumbles of goat cheese. It’s also AMAZING over roasted beets and brussels sprouts.

How to Make Salad Dressing with Fruit

Using the basic formula outlined in the recipe below, it’s easy to make salad dressing with almost any fruit you like!

For this strawberry balsamic version, you add fresh berries and the remaining ingredients to a blender or food processor and blend until smoothly combined. You could easily use raspberries, blueberries, pineapple, mango, or even avocado instead of strawberries if you want! Just pick a fruit, use the ingredients below – although I’d recommend leaving out balsamic for some flavors! – blend it up, and enjoy!
