Canning has become such a popular way of making freshly-made foods last for a longer time. It also provides a means to give your homemade foods as gifts to friends and loved ones. Canning isn’t just for jams and jellies during the summer months; there’s a wide variety of foods that can be made all year long and preserved in jars. From marinated mushrooms and artichokes, to pickled veggies and leeks, the possibilities are endless.
My two sisters-in-law and I have really been enjoying the canning process; it gives us a chance to spend quality time together, plus we get to eat the results! Here’s our recipe for Giardinera, or Italian Pickled Vegetables. This traditional Italian food is usually served with the antipasto course and lots of crusty bread. It’s also delicious on a sandwich, providing a bit of crunch from the veggies and a kick from the pepper and garlic. I love it so much, I eat it straight from the jar!
