Italian Pickled Vegetables (Giardinera)

Canning has become such a popular way of making freshly-made foods last for a longer time. It also provides a means to give your homemade foods as gifts to friends and loved ones. From marinated mushrooms and artichokes, to pickled veggies and leeks, the possibilities are endless.
