My daughter started full-day kindergarten on Monday. So far, she has absolutely no interest in buying the school lunch. And since she’s not a fan of peanut butter and jelly, I’m trying to find a variety of healthy lunch options to pack up for her. If she had her way, she’d eat honey ham and bologna sandwiches every day, but since that’s not very healthy to eat on a daily basis, my challenge is to find foods that will satisfy her appetite and keep her going all day.
I had a boneless pork roast in the freezer, so I decided to make pulled pork in the Crock Pot. It was SO EASY! I shredded it up and sandwiched it on a soft, whole wheat bun for today’s lunch. These would also be fun for kids to eat on slider buns. She’s going to love it!
