Although BACARDI Classic Cocktails Light Strawberry Daiquiri is ready-to-serve (just pour over ice), I decided to use it to make a frozen beverage, flavored with pineapple and fresh mint. Just combine all of the ingredients in a blender and serve… sophisticated summer entertaining has never been so simple! This cocktail is not only refreshing, but it looks so darn pretty. I just love the little specs of green mint floating throughout the glass!


  • 3/4 cup of BACARDI Classic Cocktails Light Strawberry Daiquiri (preferably chilled)
  • 3-4 large strawberries, rinsed and stems removed (plus 1 extra strawberry for garnish)
  • 1 frozen pineapple fruit bar, like Edy’s Outshine
  • 3-4 fresh mint leaves (plus more for  garnish)
  • 4-5 ice cubes
