No special flours are needed to bake this decadent, naturally gluten-free Flourless Black Forest Cake.

Ingredients

  • 1 1/3 cup (315 ml) water
  • 2/3 cup (115 g) white quinoa (rinsed if the package doesn't state that it is rinsed)
  • 1/3 cup (80 ml) milk
  • 4 large eggs, room temperature
  • 1 teaspoon (5 ml) pure vanilla extract
  • 3/4 cup (170 g) unsalted butter, melted and cooled
  • 1 1/2 cups (185 g) granulated sugar
  • 1 cup (120 g) cocoa powder
  • 1 1/2 teaspoons (7.5 ml)baking powder
  • 1 teaspoon (5 ml) espresso powder (optional, but adds good flavour to chocolate cake)
  • 1/2 teaspoon (2.5 ml) baking soda
  • 1/2 teaspoon (2.5 ml) salt
  • 1 1/2 cups (355 ml) heavy whipping cream
