Spicy Quinoa-Crusted Chicken Fingers

Since this recipe uses cooked, cooled quinoa, it would also be a great use for leftover quinoa. You will need about 1 1/2 cups of cooked quinoa for this recipe.

Ingredients

  • 600 grams (1.3 lbs) boneless, skinless chicken breast, cut into 1" strips
  • 1 cup water
  • 1/2 cup quinoa
  • 1 tablespoon chili powder
  • 1/4 - 1/2 teaspoon cayenne pepper (for a little heat, stick to the 1/4 teaspoon)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup white rice flour
  • 1/3 cup cornstarch
  • 1 teaspoon salt
  • 2 large eggs, beaten
  • 1 tablespoon lime juice
  • 2 small avocados, peeled and pitted
  • 1/4 cup loosely packed cilantro leaves (no stems)
  • 1 tablespoon lime juice
  • 1 clove garlic, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon onion powder
