Neapolitan is a perfect balance of chocolate, vanilla & strawberry, and is very popular as an ice cream flavour. However, you can take that same concept for different desserts as well. These gluten-free cupcakes are a perfect example of that. They combine the richness of chocolate, the classic flavour of vanilla, and the berry-licious taste of strawberry in one cupcake. They are topped with Strawberry-Vanilla Swirled Buttercream, the perfect topping for these cupcakes, and so pretty too.

Ingredients

  • 1/3 cup brown rice flour
  • 1/3 cup tapioca starch
  • 1/3 cup sorghum flour
  • 1/2 tsp xanthan gum
  • 3/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup buttermilk
  • 1/4 cup canola oil
  • 2 large eggs
  • 2 Tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 tsp strawberry extract plus 5 drops red food colour
