Apple Bundt Cake

When friends need comfort, I offer food. A dear friend lost her father and her grown children were returning home for the services. This apple Bundt cake was made out of love for my friend and her grieving family. This is a variation on an apple cake I’ve been making for decades…a simple batter with chopped apples and toasted pecans added just before baking.  Without the brown sugar sauce, it’s perfectly acceptable to serve this cake for breakfast or brunch…but to amp it up, definitely take the few extra minutes to make the caramel topping.

Ingredients

  • 3 eggs
  • 1¼ cups vegetable oil
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 3 cups peeled, cored and chopped apples
  • 3 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped and toasted pecans, cooled
  • ¼ cup cream
  • ½ cup (1 stick) butter
  • 1 cup brown sugar
