Strawberry Shortcake #SundaySupper with Cristina Ferrare

I have a special treat for you for this week’s #SundaySupper. I was given a copy of Cristina Ferrare’s gorgeous new cookbook, Big Bowl of Love. I have been a huge fan of Cristina since her days on Home and Family and also own her first cookbook, Family Entertaining. Full of simple, family friendly dishes, I was ready to start on page one of her newest release and cook my way through the delightful compilation of recipes. 

First up to try was a marinated flank steak…and the soy, balsamic vinegar, Worcestershire and garlic provided a splendid infusion of flavor for our grilled entree. It made a lovely weeknight meal. But as most of my followers know, I turn to the back of a cookbook first to peruse the dessert section…and I was not disappointed. Cheesecakes, cobbler, cookies and brownies all caught my attention, but I had to select Cristina’s Strawberry Shortcake…a seasonal favorite in our home. Still too early for our local berries, thanks goodness there were beautiful, fragrant strawberries available at our Whole Foods. Her tender biscuits were made with yogurt and heavy cream and then topped with both strawberry coulis and sliced berries and finished with a dollop of whipped cream. I made the traditional round shortcakes and then a few smaller square versions to share with some girlfriends.

Ingredients

  • 2 quarts fresh strawberries, hulled and sliced
  • 1 cup orange juice
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • ¼ cup water
  • 2 cups heavy cream, whipped
  • 1 teaspoon vanilla
  • ½ cup powdered sugar, optional (my addition)
  • 1¾ cups flour
  • 1 tablespoon baking powder
  • 3 tablespoons sugar
  • ½ stick (1/4 cup) cold butter, cubed
  • ½ cup heavy cream
  • ⅓ cup plain yogurt
  • 2 quarts fresh strawberries, hulled and sliced
  • 1 tablespoon orange zest
  • Mint leaves to garnish
