Chippy Bars

When my children were wee ones, these were frequently baked for dessert. Chocolate chip cookies were too time consuming or maybe I was just lazy…spreading the batter into a 9 x 13 was a much easier options. The kids dubbed these Chippy Bars…and the name has stuck even though they’re full grown! The key to their deliciousness is underbaking just slightly…so they’re moist and chewy. Danielle, one of my foodie friends who bake and decorate extraordinary cookies with a newborn, inspired me to add white and milk chocolate chips to the semisweet I usually use. Two of my live-in chocoholics protested, but most of these are a going to a friend…and I’m certain they’ll be able to choke down a few!

Ingredients

  • 1 cup butter (2 sticks)
  • ¾ cup brown sugar (I used dark brown sugar)
  • ¾ cup sugar
  • 2 eggs
  • 1½ teaspoon vanilla
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2¼ cups flour
  • 2 cups semisweet chocolate chips or 1 cup semisweet chocolate chips plus ¾ cup white chocolate chips and ¾ cup milk chocolate chips
