I am a sucker for waffles. And pancakes. But, waffles are probably my favorite breakfast food. There is a place in Tahoe City, California that makes amazing Belgian Waffles, and I make 2Chili take me there every time we are in town!
But, the “health rub” with waffles is that they are usually full of salt, fat, and refined, processed sugars and flour. It’s kind of hard to make waffles work without fat – they won’t release from the waffle iron if you don’t get the balance right. But, they don’t need the refined sugars or flour.
- 1 and 1/4 cup rolled oats, blended into oat flour
- 1/2 cup whey protein powder (I used a vanilla flavored powder – just Target’s generic brand)
- 1 and 1/3 cups coconut milk beverage (like So Delicious brand – this is different from canned coconut milk)
- 1 tablespoon coconut oil
- 1 teaspoon baking powder
- 1 tablespoon honey
- 1 egg, separated
