Summer Salad of Rice and Peaches

Now that it is officially summer, I really try hard to find dishes that don’t heat up the kitchen. While rice does need to be cooked, it can be done early in the day then served at room temperature. Sounds unappealing? Not if you flavor the rice with seasonings, fresh fruit and almonds, then  drizzle with a flavored balsamic vinegar.

Ingredients

  • Serving for two
  • 1 1/2 cups liquid, preferably chicken stock
  • 1/2 cup white rice, Uncle Ben’s Original
  • Two medium ripe peaches, sliced in 1/8 cuts
  • one cup (approximately) of baby spinach, fresh/raw
  • 1/8 cup of slivered almonds
  • salt and pepper to taste
  • Cherry Balsamic Vinegar (optional)
