Vegetables going bad? Juice them!

Juicing is expensive. It becomes thrifty however, when you are juicing produce that is about to spoil! This weekend, I was about to toss a bag of mini cucumbers that started shriveling, when I thought of Jonni’s advice “Waste Nothing!” Then I realized it was J week , and cucumber juice was born.

The juice had a delicious and fresh smell to it.  To make our juice something the kids would drink, I used:

8 ounces apple juice

1 TBL cucumber juice

1 TBL pineapple juice.

One way I’ve been using vegetable juices is to pour it into ice cube trays.  Ours are exactly 1 TBL. This way, you can pour 8 ounces of apple juice (or water) into a glass, and drop one cucumber ice cube into their drink to slowly melt.  We had also frozen some pineapple juice from a can of pineapple we opened this weekend (no sugar added when buying canned pineapple!)

Ingredients

  • 8 ounces apple juice
  • 1 TBL cucumber juice
  • 1 TBL pineapple juice.
