- 1/2 c. cherry tomatoes, sliced
- 1/4 c. red onion chopped
- 1 c. chickpeas, cooked
- 1 avocado, chopped
- 1/4 c. lemon juice
- 1/2 c. fresh parsley, chopped
- 1 tsp. salt and pepper
- 2 tbsp. extra virgin olive oil
