Healthy gluten-free morning glory pumpkin muffins sweetened with Medjool dates. Flourless, egg-free and dairy-free without refined sugar and oil, but you would never guess with the spiced pumpkin flavor and fluffy texture.

Ingredients

  • 1 cup pecans
  • 1 cup gluten-free old fashioned rolled oats
  • 1 cup gluten-free oat flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • 1 tsp baking soda
  • ½ tsp sea salt
  • 1 tsp xanthan gum
  • ½ cup apple cider
  • 2 tsp vanilla extract (I love Rodelle)
  • 1 cup pitted, chopped Medjool dates
