Three Bean Country Cabbage Vegetable Soup

A warm, cozy, hearty, and healthy gluten-free and vegetarian soup packed with veggies, beans, and spiralized cabbage noodles. Seasoned with sage and oregano, a bowl is a delicious transition from summer to fall.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 yellow onion, diced
  • 4 stalks celery, diced
  • 4 medium carrots, diced
  • 4 cloves garlic, minced
  • 8 cups vegetable broth
  • 3 bay leaves
  • 15oz can black beans, rinsed and drained
  • 15oz can kidney beans, rinsed and drained
  • 15oz can navy beans, rinsed and drained
  • salt and pepper, to taste
  • Parmesan or Pecorino Romano, for garnish (optional)
