Vegan Pistachio & Garlic Scape Pesto

A summertime pesto featuring garlic scapes for a hearty, zesty, garlicky fresh sauce. Perfect spread on toasted bread or crostini, paired with cheese, or topped on grilled veggies.

Ingredients

  • ½ lb garlic scapes, tough ends trimmed
  • ¼ packed cup fresh Italian flat leaf parsley leaves
  • ½ packed cup fresh basil leaves
  • ¼ heaping cup shelled pistachios
  • 1 tbsp lime juice
  • 2 tbsp water
  • salt and pepper, to taste
