St. Patrick’s Day is almost upon us. Some see it as an occasion to celebrate their Irish ancestry, others a good excuse to drink beer all day at a local pub without judgment. I see it as a day to get inspired in the kitchen with creative, non-traditional St. Paddy’s (St. Patty’s?) eats.
I’m half Irish, so on St. Patrick’s Day growing up, we would feast on my Nana’s recipe for traditional corned beef and cabbage – with a side of boiled potatoes and carrots, of course. I would bake a loaf of soda bread, or dream about the brown bread I ate every day in Ireland on my semester abroad in college. St. Patrick’s Day as a gluten-free, vegetarian adult is a completely different experience – and a more enjoyable one, I think. I’ve stepped out of the traditional St. Patrick’s Day food box, researching, concocting, and embracing recipes with a fun, green and/or Irish inspired twist.
